Isaac del Toro Romero (born 27 November 2003) is a Mexican cyclist, who currently rides for UCI WorldTeam UAE Team Emirates.

He won the 2023 Tour de l'Avenir, making him the first Mexican to ever win the race. In October 2023, he signed a three-year contract with UCI WorldTeam UAE Team Emirates for the 2024 season. He made his debut with the team at the Down Under Classic in January, where he finished third. He then went on to win the second stage of the 2024 Tour Down Under four days later, after attacking solo near the end of the race. He finished fourth at the 2024 Tirreno–Adriatico.
